The grill use made of stainless steel. It is thick and heavy so it will hold tons of heat. Perfect for searing food. While stainless steel is notorious for sticking, you can season it like cast iron. It is a polymerized fat that will make the surface nonstick. As you cook in it, it will only get better. You can season the surface by spreading a thin coat of fat over it. You will then heat it up to smoking pot. Let it cool and repeat as necessary. Overtime the nonstick coating will get better and better.

Push Start and Drip Tray

Evo Grill has some convenience features. One of which is the push start. No more do you have to heat up the grill with coals or wood. All you need to do is press the button and both ring of fire will heat up.

At the base, there is a drip tray to catch any food and grease. This makes cleaning a lot easier and less messy.

Overall, the EVO Grill is a great flat top griddle. It has a powerful dual zone heat plate for fast and even cooking. If you dont need the power, then the 30 g model is a good choice. However, the professional series has that extra oomph if you plan on cooking a lot of steaks. The one with the cart is the most versatile of all. That is the one that I recommend people to get. You do not have to waste money mounting it and you can move it around easily.
