Staub Heritage All-Day Pan Review

Staub Heritage All-Day Pan is one of the best versatile cookware in the kitchen. At its core, the design is a roudeau. A rondeau is a two looped pot on either side. Much like a saute pan without the long handle. This shorter handle lets you cook on the stove top while at the same time, giving you enough room for the oven. The are great for braising, sear and even making soup. For this reason, Staub classification of All Day pan is right. This review will take a closer look at the design and features of Staub Heritage All-Day Pan.

ThoughtsStaub Everyday pan is really a great all around pan. Good if you are limited on choice. The biggest issue though is the glass lid. Those are fragile and can shatter if you are not careful. If anything, I recommend getting the Braiser instead. It comes with a metal lid.

History of Staub

Staub was founded by Francis Staub in 1974. Their initial products were molded out of wood carving. They offered a much different colors than rival Le Creuset. Theirs are much more deep and vibrant. Which I personally find to be more attractive. In 2008, they were bought out by German Cutlery manufacturer Zwilling. However, they still maintain independent control of the company. Today, they are one of the best enamel cast iron cookware manufacturer in the world. Rivaling that of Le Creuset.

Staub Heritage All-Day Pan Design

This section will discuss the design and construction of Staub Heritage All-Day Pan. We will go over handle, shape and overall performance.

Handle

Because of the way that the pot was made, the handle is fused with the pot. There are no rivets or screw to attach it. This single piece is an all around better design. It wont get loose or fall off overtime. However, since it is metal, expect it to get hot. What is great about this design is that the handle is up and away from the pan. This makes it easy to move and carry around. One of the biggest issue is clearance, they could have improve it by making it a lot wider. Nevertheless, it does what it needs to.

Shape

The shape resembles that of a traditional french skillet. The sides are slightly curved encouraging evaporation of liquid. However the sidewall are tall enough to hold a good amount of liquid, perfect for braising. Just be aware, tossing and flipping food will be a bit of a challenge when you use a spatula. You also cant flip food with your wrist because of the design. Given that, this pan is meant to do it all. Some give was expected considering what its suppose to be. I do wish they have a pouring lip to help in draining of liquid.

Staub Heritage All-Day Pan Lid

The lid was a horrible choice in my opinion. I wish they would have stuck with a traditional cast iron lid. For one, they are more durable then glass. You do not have to worry about babying it. Nor do you have to worry about thermal shock. Thermal shock is when it goes from hot to cold, they can shatter if that happens.

Another issue is that its not as heavy as cast iron. Cast iron lids are heavier and they hold moisture in better. Considering that braising is what this pan is suppose to be great at, a glass lid was a horrible choice. I also dont think the random glass lid goes with the enamel coated pan.

Enamel Coating and Colors

One of the reason why Staub cookware is so expensive is because of the colors. Theirs are still made in France unlike most other manufacturer. In my experience, the coating is a lot more durable than the competitors. However, they are not indestructible. If you manage to hit it hard enough, it can chip.

I will also say that the finish is better than Le Creuset. On my Le Creuset cookware, they tend to have a lot of rippling effect on the pain. Staub still have it but its not as prominent.

The interior enamel coating of the pan is black. While it does help it hold heat a little better. The gains that you gain is marginal compared to the fact that you cant see. It is very easy for you to accidentally burn the fond ruining your dish. Cream color enamel get dirty fast but at least you can watch it.

Safety, Seasoning and Rust

Unlike bare cast iron, Staub Heritage All-Day Pan uses enamel to protect the pan. If bare cast iron is not seasoned, it can develop rust. If you manage to chip the paint, then you need to cover the exposed area with oil to prevent it from rusting. It is also safe to use if it does chip. Afterall, its just cast iron underneath.

One of the biggest issue that I have with Enamel Coated cast iron is that it wont develop a nonstick coating that bare cast iron can. This means that if you are inexperienced, you will have a difficult time cooking. Luckily, since you would most braise stuff, this wont be that much of an issue.

One final problem that I have with enamel coating is that they degrade heat transfer. In my past experiments, I found that cookware with enamel cookware perform worse than bare cast iron. The thermal conductivity of enamel is simply not as good as bare cast iron.

Staub Heritage All-Day Pan Thoughts

Staub Heritage All-Day Pan is a pretty versatile pan. If you can only get one pan, I recommend getting one. The biggest issue though is the lid. If only it came with a cast iron. The glass lid just makes it feel like they cheaped out. Now you have to baby the lid in hopes that it wont crack…A glass lid also really looks out of place.
