What not to Cook in a Aebleskiver Pan
There are a couple of dishes out there that looks similar to Aebleskiver. However, the shape and size are not the same. One prime example is Poffertjes. Poffertjes is more flat with a slight dome. They look more like miniature pancakes. If you want to cook Poffertjes, there is a Poffertjes Pan designed specifically for that. Food like Serabi and Kue cubit will be better suited for those pans.

Oh no! Cooking aebskeiver in a teflon pan is a sin. Vikings killed for less. Cast iron is the only way to go. It cooks evenly, crisps the outside leaving a pillowy inside with or without filling.
Don’t buy Chinese teflon for a scandi classic. A cast iron pan that is seasoned does not stick and will last beyond a lifetime.
